There is a very personal reason why I carry an ancestral love for good food and always save room for “something sweet” after a delicious lunch, a dinner or a get-together with friends or family: the pleasure of offering and savoring a dessert, because it is a way of having a sweet delight in every bite.

I’m Catalina Verónica Pérez Jaimes
I’m from Cali, Colombia. From a very young age I watched my mother and an aunt build their way of cooking on family traditions, and that led life to give me the opportunity to study gastronomy in Argentina, venturing to explore other worlds through cooking until I graduated as an International Chef. My curious spirit has always pushed me to keep learning on my own and to take online and in-person courses to stay up to date with the tastes and trends of gastronomy and pastry.
With more than 20 years of experience I can say that pastry demands discipline, precision, a lot of love and something just as important: patience and a passion for what you do. Every trip and every restaurant and hotel kitchen I had the chance to know gave me the vision to open my own businesses in my country, Colombia. But life is not a straight line; it is a roller coaster full of colors and flavors that has placed me before important decisions, and one of them brought me today to Santa Rosa Beach, Florida, creating and offering a sweet delight in every bite with Jaimes Artisan Bakery.

More than a dessert, a memory
Jaimes Artisan Bakery was born not just to offer a simple complement to a good meal, but to be part of an identity, a cultural expression and a chance to turn a pleasant meal, a family gathering or a special day into an unforgettable memory. Because so often the last flavor is the one that stays longest in our memory; that is why our motto is: A Sweet Delight in Every Bite.
My bakery is something I carry deep within me, because it is an expression of my culture, my traditions, my creativity and my hospitality.
That is why I can say that my desserts are tied to my story, my family, my travels and my memories, which since 2003 have taught me the joy of seeing someone smile with the last bite of a good dessert.
